Everything We Love Cookies

What does a cookie have to do with the inter-disciplinaries humanities program? IHUM gives students lots of options, letting students pursue their interest in literature, film, art, music, and more. You also get to specialize in one of the things you love the most, partly by taking the other great courses throughout the college.

These cookies are designed to give you options to explore. Yes, at their core they are a chocolate chip cookie, but what makes these great is that you can add or subtract other ingredients as you like. You can add things like dried fruit (no raisins please!), potato chips, nuts, or whatever else you are bold enough to try.

1 cupUnsalted butter (softened, not melted)
1 cupGranulated sugar
1 cupBrown sugar
2 Eggs
2 teaspoonsVanilla extract
2 1/3 cupsFlour
1 teaspoonBaking powder
1 teaspoonBaking soda
1 teaspoonSalt
1 cupRegular oats
1 cupSweetened coconut
1 heaping cupChocolate chips
1 heaping cupCorn flakes

Makes 22 cookies.

Preheat oven to 375°F and place rack in center of oven.

Cut butter into tablespoons and place in large mixing bowl. Turn the mixer on low. Add sugars, eggs, and vanilla. Beat on low speed until blended.

Turn off mixer. Scrape down the blades of the beater and the sides of the bowl. Add the remaining ingredients to bowl.

Turn mixer on low and mix just until all the flour disappears and ingredients are blended well. Do not turn above low speed.

If needed, stop mixer and scrape down the ingredients into the bowl.

Using a scoop, place 6 scoops of cookie dough onto cookie sheet. Press down lightly with palm of hand to flatten the ball of dough just a bit.

Bake for 9 to 11 minutes. Remove from oven and let cool.
